The dishes are evaluated by a jury composed of cooking school teachers, a student and renowned local chefs such as Kim Carter, chef and kitchen manager of the Food Bank of Central Texas, and Adrian Bruce, former student of Escoffier and executive assistant chef of the Hotel Granduca.
